Not sure if this does or doesn’t help with the pullstart ideas. This one was setup like this when I picked it up a couple years back.

those look to be the pull start mounts, the non pull start dont have the raised shelf for the engine to bolt to

Not the best photos but here's a pull start engine with non pull mounts. The only negative is that the pullstart hangs down below the chassis. The OS engines have/had big pull starts so something like a Force engine with a smaller pull start wouldn't be nearly as bad.
The header on the other hand would need to be found unless AE brings out a re-re P/S header.
Also, there is no reason you couldn't put spacers under the engine to raise it if the low hanging pullstart is a concern.

Yep. The P/S mounts are "stepped" up to raise the engine, while the non P/S ones are just "flat"...
In fact, there are a few different versions of the non P/S ones ...
...and some of them (seems to be the "early" ones) have an extra "tab" cast onto them, so they physically will not bolt up to an engine with a pull start on it..
I REALLY gotta get un-lazy, and figure out how to put pics on here!

The kit appears to come with universals…does that mean 3/16 or 1/4 axles?

You guys thinking of doing box art or something different? I was never really a fan of that dark red or whatever you call it, so I'd probably at least change that color or maybe something different all together.
