JK Racing: what`s the white stuff on the enchilada? cheese? I once went to San Francisco and ate a burrito, it was quite good.

shredded lettuce, minced onion, then topped with queso fresco (fresh cheese)...and a little sour cream

That looks great. How was the over all flavor of the dish?

I would make that a few times a week, looks great!

Here was tonight's offering. Triple AAA Alberta Beef in a T bone form. This was awesome, Mushrooms and onions on the side and a Cesar Brocoli salad.

The pic does not show the size. To do it justice, the steak was over 2 inches think. For a T-Bone, that is huge for the price. Yum! 8)

Anyone ever make a pizza on the grill? I'm looking for some tips like what to put it on and temps.

Edit: I forgot to mention I made some skinless, boneless chicken on the grill today and topped it with a mix of BBQ sauce and maple syrup, which was surprisingly good.

It was a really nice dish, probably pretty close in flavour to many traditional Mexican-type dishes, although maybe a bit milder. I'll be asking for it again, but not a couple of times a week, as that would interfere on my curries, stews, and other great meals.

I've never tried to grill one. If you've seen how ugly my crusts turn out I have little faith that I could make the transfer to a grill top with any other result than a giant mess. :oops: Alton Brown's show "Good Eats" has a great grilled pizza episode, and it's a great show anyway. New episodes stopped years ago, but re-runs air like crazy on all the cooking networks. Other than that you may try youtube. Chef John on the Food Wishes channel may have one. He's kinda funny too sometimes. If you want to get real serious you could get one of these. I just saw one recently. Kinda cool.

I'm doing ribs Saturday Joey. They look killer. I was drinking Budweiser this weekend too Dave. 8) Had to go to Baltimore for business for a few days. I had Crab Cakes 3 times! :lol: Eat Bertha's Mussels - a restaurant in downtown Baltimore had the best IMO. That steak looks like a keeper!

Did ribs last Saturday. I was busy with company so I didn't get any after pics. Anytime I fire up the smoker I throw on a batch of sausages to take to work for lunch the next week too. 8) I really feel like I've been neglecting my big smoker, but I've been using the electric for the last year in order to get it good and seasoned. It's really starting to develop some flavor all it's own. Same reason I just keep rebuilding my gas grill. Use after use really builds character and flavor in a grill. I actually measured (kinda) my rub this time too, so I'll post it here soon in case anyone wants to try it.

Did ham and cheese paninis tonight. Swiss and Cheddar on yeast rolls. Very good. The Panini maker is the best 20 bux I've ever spent. Endless possibilities. :mrgreen:
