Believe it or not I get blood work every 6 months because it's free thru my insurance and my cholesterol hovers around 168. I invited a few Italians over for dinner tonight.

Here's something I slapped together (literally) for breakfast during my recent trip to Puerto Vallarta, Mexico: fried egg, fresh avocado (the avocados in Mexico are awesome), slices of Brie cheese, and a pair of tortillas...toasted in a frying pan until the cheese melts, "gluing" them together. It tasted great!
Ken, the Italians are great to dine with, bring some red wine and we have a night made in.... dunno.
Marc, fresh made anything is great especially in Mexico, I wish!
Mac and cheese is great as well, the beer is the icing on the cake. Hmmm cake.... Only thing better with that is some fresh lobster in the M&C, Oh boy!
Tonight is a three pepper marinade on a big fat rib eye. Asparagus on the side and I am to lazy to make any extra potatoes/noodles/veg/salad. Long hot day here.
A whiskey butter will top the steak, the veg will be lightly peppered, no salt. I don't care for salt really.

The family was on vacation without me this week so one night I whipped up a batch of pepperjack mac and cheese with pepper crusted bacon and lots of crushed red peppercorns. Super easy and turned out well enough that I think they will eat it (I am not allowed to experiment with dinners, they are super picky! Lol)
I need to drop a cheat in here...my son and I were away at a race all day yesterday (A L L D A Y), so we took some time and walked to a nearby Thai restaurant. Ummm, lets just say they serve family style and great food. Dont mind my goober making faces at me.
