I would disagree about the Holley...Holleys and Mopars don't usually go well together. I had a Holley 750 double-pumper in my Charger and that thing was a POS that would never stay in tune. I ignored my mechanic buddy's advice when I bought that carb, and I paid for it in "I told you so's". Finally yarded it out and sold it to a guy who put it on his '69 Chevelle 396 and it ran perfect.
The best carbs for the old Chryslers were the Carter AFB's & ThermoQuads, they were very easy to tune and made good performance. They were later bought out by Edelbrock though, and their Performer carbs are practically identical to the old Carter AFB design. That design by Carter was so good it hardly needed any improvement. They're so easy to tune, and STAY in tune.

When I fired up my 383 Magnum a few summers ago for the first time after sitting nearly 12 years without being turned over, it hardly took any adjustment to get my Performer carb tuned and the car running nicely again. I highly recommend that over a Holley, most Mopar guys will tell you similar advice. A 750 cfm carb would be ideal.
