Use fresh veg if available. Corn, chiles, peppers, cilantro of course.
One can of black beans. Drain and rinse well.
One can of corn, one can of green chiles. (Find them in the taco section/area at the grocery store).
One jar of roasted red peppers, chopped really well.
One can of diced tomatoes, (olive garlic flavor) Or one can (same size) of fresh diced tomatoes, that is what we use. Fresh from my Mom's garden.
Four green onions, diced. One small red onion, diced. Large red onion is better.
1-2 tablespoons of minced garlic, be a MAN and add 3-4 whole chunks, diced finely. The fresh garlic will not over power the rest of the veg. The more the merrier!
One bunch of Cilantro, this can be strong. She adds a half bunch. I added a whole large bunch of Cilantro and it was great.
Season with fresh cracked black pepper and a pinch of salt. I do not use salt very much but this helps bring out the moisture and flavor of all the veg.
The pepper is something that adds depth of flavor, add it. Salt occurs in everything we eat, I do not use salt on a regular basis, in this case it helps the veg combine.

I can add the name brand and such of all the canned goods if needed.
So freakin great when served with Tostitos Scoops, or kick it up a notch and use Tostitos Hint of Lime chips. The lime flavor sets it off.
I bet it would be just as great served with some dry bread/day old bread and red/white wine of your choice. Cheese on the side of course.
If you make this and don't eat all of it that day, stick it in the fridge and the next day drink the juice that has accumulated. So tasty!!
