Thank you for this very helpful post! A few questions from above...
1) So the bluing actually turns out black correct? This is the look I prefer anyways.
2) What kind of oil did you use for the metal parts after derusting?
3) Vinegar is effective for rust removal, but why only 20%?

4) Any way to keep vanilla white nylon from becoming yellow over time?

The bluing fluid is actually a blue tint out of the bottle. The steel ends up with a black oxide protective coating.
I used light weight 3 in 1 machine oil, like is used for sewing machines and general mechanism lube.
Somebody else will have to go over the vinegar question, but it's probably for the same reason that Coca Cola is said to be a good rust remover, the weak acid content.
I'm no good managing white nylon. Can't help with that.

I really think the only way is to keep it from UV exposure and air contaminates (smoke/oils [don't store it on top of oven hood vent while smoking Lucky Strikes and pan-frying bacon]). Then it's just a matter of careful disassembly, whitening with peroxide, and reassembling if the yellowing becomes "unacceptable".
