Just one narrow belt will work fine in the car. My brother frequently ran his like this with an 11 Double motor (pre brushless days) and it was fine for the whole year.
As mentioned above make sure you have a bit of slip from the slipper and everything will be ok

Thanks, I'll run the car with the one belt. I'll also look into the replacement belt options so I'll be able to get one or two as spares.

I've run a (the same) single belt in one of my Ultima Frankenstien projects since the 90's.
The trans was modified for standard (US spec) spur gear...w/no slipper.
It's been run with everything from Proline 2" Road Hawgs to 2.2" monster tires..No Problems...at least with stock type motors.
I think if the diff is set correctly, you'll never have any troubles.
I'm lucky that I aquired a couple back ups awhile back in case this thing ever wears out.
Oddly, they are exacty the same, but they have different secondary markings on them. I'm not sure if these numbers will help in your search, but here's a couple pics of the numbers if it will help:

Diggley, it looks like you have the wider (6mm) belt. I had a look at my belt and some of the writing is different to yours, mine has the following: 12 084 MG5204 L1K

the only constant nr is MG5204: designator of the belt type and thus nr of teeth. The other nr's are for individual identification of the tube and individual belts cut from it: they serve traceability in case a problem is identified.
